Mincemeat muffins
Makes 12 large or 30 mini muffins
A simple muffin with a festive twist – easy to make, bake and freeze
Before you start, pre heat the oven to 190oC/375oF/gas mark 5
Ingredients:
- 100g (4 oz) soft margarine
- 100g(4 oz) caster sugar
- 1 tsp vanilla essence
- 200g (8 oz) Juvela gluten free mix
- 1 tsp baking powder (gluten free)
- ½ tsp mixed spice
- 4 medium eggs, beaten
- 6 tbsp mincemeat (gluten free)
Method:
- Mix together all the ingredients until light and fluffy
- Divide between muffin cases and bake in a pre-heated oven for 15-20 minutes until golden and firm to touch.
