Bruschetta Toppings
These toppings are great with our gluten free baguette recipe. Slice the baguettes into 1 cm slices, then drizzle with a little olive oil and bake in a moderate oven for 10 minutes until toasted. If you love garlic, feel free to rub a fresh clove over the bread, once toasted. Then top with one or all of the toppings below. Why not try all three recipes as great canapes, or as a sharing starter board for a party!

Ingredients
- 100g (3½oz) cherry tomatoes
- 6 basil leaves
- 2 spring onions
- 1 clove garlic, crushed
- 10ml (2 tsp) olive oil
- Salt and pepper to season
- 12 slices of baguette

Method
- Cut the cherry tomatoes into quarters, and place in a bowl
- Chop the basil, and slice the spring onions, and add both of these to the tomatoes
- Add the garlic and a drizzle of olive oil to combine the flavours
- Season to taste, and then place on top of the bruschetta bread pieces.
