Potato salad

No barbecue would be complete without a good potato salad to complement the grilled mains.

Ingredients

  • 6 large potatoes
  • ½ onion, finely chopped
  • 2 spring onions, cut into rounds
  • 2 tbsp (30g) capers
  • 3 tbsp (45g) mayonnaise*
  • 1 tbsp (15ml) olive oil
  • 1 tbsp (15ml) white wine vinegar
  • Salt and pepper to taste
  • 1 tsp (5g) oregano
  • Some parsley

Method

  1. Peel and boil the potatoes in salted water for approximately 20 minutes until tender. Drain well and leave to cool
  2. Cut the potatoes into chunks, then toss all the ingredients together
  3. Finally, stir in the finely chopped parsley and serve.
