Potato salad
No barbecue would be complete without a good potato salad to complement the grilled mains.

Ingredients
- 6 large potatoes
- ½ onion, finely chopped
- 2 spring onions, cut into rounds
- 2 tbsp (30g) capers
- 3 tbsp (45g) mayonnaise*
- 1 tbsp (15ml) olive oil
- 1 tbsp (15ml) white wine vinegar
- Salt and pepper to taste
- 1 tsp (5g) oregano
- Some parsley

Method
- Peel and boil the potatoes in salted water for approximately 20 minutes until tender. Drain well and leave to cool
- Cut the potatoes into chunks, then toss all the ingredients together
- Finally, stir in the finely chopped parsley and serve.
