Tzatziki dip
This tasty dip makes a great condiment for your meaty mains or barbecued vegetables. It can also be served as a dip with grilled pitta bread.

Ingredients
- 300g (11oz) plain strained yogurt
- 2 garlic cloves, crushed
- Salt to taste
- ½ tbsp fresh dill, finely chopped
- 2-3 tbsp (45-60ml) olive oil
- 2/3 cucumber, coarsely grated
- 1 tbsp (60ml) white vinegar for cucumber

Method
- Peel cucumber and coarsely grate with a cheese grater, using the large blades
- Put the cucumber in a bowl and add a pinch of salt and 1 tbsp of white vinegar. Squeeze the cucumber with your hands to release its liquid
- In another bowl, combine all the ingredients together and mix thoroughly. Season with salt and pepper to taste
- Cover and refrigerate until needed.
