Tzatziki dip

This tasty dip makes a great condiment for your meaty mains or barbecued vegetables. It can also be served as a dip with grilled pitta bread.

Ingredients

  • 300g (11oz) plain strained yogurt
  • 2 garlic cloves, crushed
  • Salt to taste
  • ½ tbsp fresh dill, finely chopped
  • 2-3 tbsp (45-60ml) olive oil
  • 2/3 cucumber, coarsely grated
  • 1 tbsp (60ml) white vinegar for cucumber

Method

  1. Peel cucumber and coarsely grate with a cheese grater, using the large blades
  2. Put the cucumber in a bowl and add a pinch of salt and 1 tbsp of white vinegar. Squeeze the cucumber with your hands to release its liquid
  3. In another bowl, combine all the ingredients together and mix thoroughly. Season with salt and pepper to taste
  4. Cover and refrigerate until needed.
