Ingredients
- 230g (8oz) gluten free self-raising flour*
- 115g (4oz) caster sugar
- 1 tsp (5g) baking powder*
- 115g (4oz) raisins
- ½ tsp mixed spice*
- 1 tsp (5ml) vanilla extract
- 115ml (4fl oz) vegetable/rapeseed oil
- 2 large eggs
- 150ml (5fl oz) water

Method
- Put all the dry ingredients in a bowl and mix together
- Add the vanilla, vegetable oil, water and eggs together and beat
- Put the wet and dry ingredients together and mix thoroughly
- Put into muffin cases in a muffin tin
- Bake in the oven at 180°C/350°F/Gas Mark 4 for approximately 20 minutes.
