Warm Salad

Ingredients
- 1 tbsp (15ml) light olive oil for cooking
- 2 shallots, thinly sliced
- 1 pack smoked bacon lardons
- 1 garlic clove, crushed
- A handful fine green beans, trimmed
- 8 small new potatoes, washed and halved
- 2 medium tomatoes, skinned and cut into quarters
- 3 hard boiled eggs, quartered
- 1 tbsp (15ml) chopped chives, fresh or freeze dried
- 1 tbsp (15ml) French dressing*
- Salt & Pepper to taste

Method
- Cook the potatoes until soft, approximately 15 minutes
- Cook the green beans until tender, approximately 10 minutes
- Heat the olive oil in a pan and add the shallots and garlic. Cook until soft
- Add the bacon and fry until lightly browned
- Add the chives (reserve some for garnish) and then empty the bacon and onion mixture into a dish and leave to one side
- Drain the potatoes, add to the pan and fry until light brown
- Drain the French beans and add to the potatoes
- Next add the tomatoes, French dressing and salt and pepper to taste and stir gently
- Add the bacon and onion mixture back to the pan and mix through
- Serve on a large serving plate and dress with the egg quarters and remaining chives
