Cheesy turnovers

Ingredients
- 1 packet gluten-free puff pastry*
- 1 large shallot, finely chopped
- 1 small tin new potatoes
- 2 tsp chives
- 115g (4oz) grated cheddar cheese
- Salt and pepper to taste

Method
- Fry the onion until soft and cut up the new potatoes in quarters
- Measure the grated cheese and put the above into a bowl and mix together
- Add the chives, 2 egg yolks, salt and pepper into a bowl and mix thoroughly
- Roll out the pastry on a floured surface about and cut out 4 saucer-size rounds, re-rolling the trimmings if needed
- Put a dessertspoon onto 1 side of each round and then fold over and seal the edges well. Brush the edges of each round with beaten egg and make a small slit in the top
- Bake in the oven at 200° C/ 400°F/ Gas mark 6 for 15 minutes or until puff and golden. Leave them to cool slightly and enjoy warm.
