Beef Casserole with parsnip, carrots and peas

Ingredients
- 500g casserole steak, diced
- 1½ tbsps vegetable oil
- 1 onion, diced
- 1 clove garlic, crushed
- 1 parsnip, cut into bite sized chunks
- 2 carrots, cut into bite sized chunks
- 1 Knorr Rich Beef Cube, dissolved in 400ml boiling water
- 100g frozen peas
- 1-2 tbsps cornflour

Method
- Preheat the oven to 160°C, 150°C fan, Gas Mark 2
- Heat 1 tablespoon of the oil in a frying pan and brown the beef. Place the meat in a casserole dish
- Fry the onion in the remaining oil for 2-3 mins until lightly golden and add to the casserole, fry the garlic for 30 seconds and add
- Add the parsnip and carrots, pour in the stock, stir, then cover and cook for 1½-2 hours or until the meat is tender
- Ten minutes before the end of cooking time, add the peas
- Blend the cornflour with a little water and stir into the casserole, return to the oven briefly to thicken
- Delicious served with mashed potato and broccoli.
