Panna cotta
Panna cotta is a remarkably simple and tasty Italian dessert often flavoured with vanilla. You could easily adapt the recipe according to the season by replacing the summer berries with whatever seasonal fruit is available.

Ingredients
- 550ml (18½fl oz) double cream
- 275ml (9fl oz) milk
- 30g (1oz) caster sugar
- 2 vanilla pods, halved lengthways
- 3 gelatine leaves, soaked in cold water
- 265g (9oz) strawberries
- 265g (9oz) blueberries
- 265g (9oz) raspberries
- 265g (9oz) blackberries
- 6 tsp (30ml) Grand Marnier

Method
- Place a pan over a medium heat. Bring the cream, milk,sugar and vanilla pods to the boil
- Once boiling, remove from heat and add the soaked gelatine. Stir until completely mixed in
- Pass the mixture through a sieve and leave to cool - if you are able to cool over a bowl of crushed ice, this will help to keep the vanilla seeds from sinking to the bottom
- Ladle the cooled mixture into ramekins and transfer to the refrigerator until set
- To unmould, dip ramekins in hot water for a few seconds then turn out onto plates
- Serve with berries and drizzle a little Grand Marnier around the panna cottas.
