Turkey meatloaf

Ingredients
- 4 tbsp (60ml) quinoa
- 125ml (5fl oz) water
- 1 tsp (5ml) olive oil
- 2 small onion, chopped
- 2 large garlic cloves, finely chopped
- 50g (2oz) spinach
- 500g (16oz) minced turkey
- 1 tbsp (15ml) tomato puree
- 2 tbsp (30ml) Worcestershire sauce
- 1 tsp (5ml) curry powder*
- 1 egg
- 1 tsp (5ml) salt

Method
- Bring the quinoa and water to the boil in a saucepan and simmer until quinoa is tender and water has been absorbed, about 15-20 minutes. Set aside to cool
- Prepare a 2lb loaf tin by lining it with tin foil
- Preheat oven to 180°C/350°F/Gas Mark 4
- Heat the olive oil in a frying pan, stir in the onion;cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; add spinach and cook for a couple of minutes until wilted. Remove from heat to cool
- Mix together all ingredients until well combined and transfer to the prepared tin
- Bake in the preheated oven for about 50 minutes, until no longer pink in the middle
