Courgette and feta pasta
To make it lactose free, omit to use feta cheese

Ingredients
- 400g (14oz) gluten free pasta*
- 1 tbsp (15ml) olive oil
- 2 onions, sliced
- 2 red peppers, deseeded and sliced
- 1 clove garlic, crushed
- 2 courgettes, thinly sliced
- 200g (8oz) baby spinach
- 2 tsp (10g) frozen, dried or fresh basil, chopped
- 300g (10oz) feta cheese, cubed

Method
- Cook the pasta in boiling salted water for ten minutes or according to the pack instructions
- Heat the oil in a frying pan and add the onions and peppers, cooking for five minutes, add the garlic and cook for further two minutes
- Add the spinach, courgettes and basil and cook for a further two minutes
- Drain the pasta in a colander and add it to the spinach mixture and cook for a further minute
- Mix in feta cheese and serve.
