Turkey patties
Great way to use leftover turkey!

Ingredients
- 454g (16oz) leftover cooked turkey meat, chopped
- 454g (16oz) boiled potatoes, mashed
- 1 finely chopped onion
- 227g (8oz) green peppers
- 90g (3oz) gluten free breadcrumbs*
- 1 tsp (5ml) salt
- 1 tsp (5ml) black pepper
- 1 egg
- 30ml (1fl oz) olive oil

Method
- Put the turkey, potatoes, onion, salt and pepper into a food processor and process for 2 minutes until all ingredients are well mixed and become dough like
- Form into burger like shapes and coat in egg
- Coat in the breadcrumbs until completely covered.
- Fry in the oil or grill until golden
- Serve with leafy salad and cherry tomatoes
