Jam Doughnuts
Gluten free doughnuts, easy to make and great to share with the family.

Ingredients
- 300g (10½oz) gluten free flour*
- Pinch of salt
- 100g (3½oz) butter
- 50g (2oz) caster sugar
- 2 eggs
- 125ml (¼ pint) milk
- Oil for frying
- Sugar for dusting
- Filling of choice

Method
- Put the flour and salt in a bowl and rub in the butter to form breadcrumbs
- Stir in the caster sugar
- Add in the beaten eggs and enough milk to make a soft dough
- Add the milk slowly as you might not need all of it
- Knead the dough on a floured surface and flatten out so it is about 2cm thick
- Cut into circles about 10cm across and cut out the middle to make a hole
- Heat oil in a frying pan and fry slowly on each side for a few minutes until golden brown
- Remove from the oil and allow any excess oil to drain away on kitchen roll
- Roll in sugar and leave to cool slightly
- To fill: This can be a bit fiddly but if you want to try making filled doughnuts you can use the same recipe but don't cut the hole out. You'll need an icing bag and nozzle to make a small hole and fill with jam.
