Chocolate Mousse

Ingredients
- 6oz (175g) dark chocolate, broken into pieces*
- 2 tbsp (30g) strong black coffee
- 4 eggs (separated)
- 1 tbsp (15ml) rum or brandy

Method
- Place the chocolate and coffee in a heatproof bowl over a pan of simmering water until the chocolate melts, stirring occasionally
- Remove from the heat and leave to cool for 2-3 minutes
- Beat the egg yolks and gradually add to the chocolate
- Stir in the rum or brandy
- Beat the egg whites until they form soft peaks and gently fold into the chocolate mixture until thoroughly combined
- Spoon into 4 individual glasses or serving bowls and chill for several hours (preferably overnight)
- If you wish, these can be topped with a few raspberries, a fanned strawberry or orange segments before serving.
