Ingredients
- 50g (2oz) cornflour
- 50g (2oz) gluten free white mix or gluten free flour (or a blend of soya, potato and rice flour in equal proportions)*
- Pinch of salt
- 3 medium eggs, beaten
- 140ml (5fl oz) milk
- 2 tbsp (60ml) vegetable oil

Method
- Preheat the oven to 220°C/425°F/Gas Mark 7
- Place the oil in a muffin tray and heat for about 5 minutes
- Mix dry ingredients in a bowl, then add beaten eggs to a thick batter
- Add the milk and whisk again
- Put into muffin tray and cook for 20-25 minutes until well risen and golden brown
