Ingredients

  • 50g (2oz) cornflour
  • 50g (2oz) gluten free white mix or gluten free flour (or a blend of soya, potato and rice flour in equal proportions)*
  • Pinch of salt
  • 3 medium eggs, beaten
  • 140ml (5fl oz) milk
  • 2 tbsp (60ml) vegetable oil

Method

  1. Preheat the oven to 220°C/425°F/Gas Mark 7
  2. Place the oil in a muffin tray and heat for about 5 minutes
  3. Mix dry ingredients in a bowl, then add beaten eggs to a thick batter
  4. Add the milk and whisk again
  5. Put into muffin tray and cook for 20-25 minutes until well risen and golden brown
