Masala lamb kebabs

Ingredients
- 450g (16oz) lean boneless leg of lamb, cut into 5cm/2inch cubes
For the marinade:
- 1 medium onion, peeled and grated
- 2 cloves garlic, peeled and finely chopped
- 2 tsp (10g) garam masala
- 2 tsp (10g) ground coriander
- 1 tsp (5g) round cumin
- 4 tbsp (60g) thick greek yogurt
- 4 tbsp (60g) mango chutney*
- Small handful of freshly chopped coriander leaves
- 20 fresh bay leaves
- 20 small whole green chillies (optional)

Method
- In a large bowl mix together the marinade ingredients
- Add the lamb, stir gently, cover and marinate in the refrigerator for 30 minutes, or ideally overnight
- Thread the meat on to 4 short metal skewers
- Cook under a preheated moderate grill or on a prepared barbecue for 8-10 minutes, turning occasionally
- Serve the kebabs with naan bread and a cucumber, tomato and onion raita.
