Masala lamb kebabs

Ingredients

  • 450g (16oz) lean boneless leg of lamb, cut into 5cm/2inch cubes
For the marinade:
  • 1 medium onion, peeled and grated
  • 2 cloves garlic, peeled and finely chopped
  • 2 tsp (10g) garam masala
  • 2 tsp (10g) ground coriander
  • 1 tsp (5g) round cumin
  • 4 tbsp (60g) thick greek yogurt
  • 4 tbsp (60g) mango chutney*
  • Small handful of freshly chopped coriander leaves
  • 20 fresh bay leaves
  • 20 small whole green chillies (optional)

Method

  1. In a large bowl mix together the marinade ingredients
  2. Add the lamb, stir gently, cover and marinate in the refrigerator for 30 minutes, or ideally overnight
  3. Thread the meat on to 4 short metal skewers
  4. Cook under a preheated moderate grill or on a prepared barbecue for 8-10 minutes, turning occasionally
  5. Serve the kebabs with naan bread and a cucumber, tomato and onion raita.
