Fresh Tomato Soup

Ingredients
- 900g (32oz) ripe tomatoes roughly chopped
- 1 small onion chopped
- 1 tbsp (15ml) vegetable oil
- 1 sugar cube
- 1 orange
- 1.8 litres (3 pints) chicken or vegetable stock*
- 2 cloves
- bouquet garni (a bay leaf, a sprig of thyme and 3 stalks of parsley)
- Fresh thyme leaves, to garnish

Method
- Soften the tomatoes and onion in the oil for about 8 minutes
- Rub the sugar cube over the orange peel, to absorb the zest, and add the sugar cube and remaining ingredients to the tomato mixture
- Bring to the boil, cover and simmer for 25 minutes
- Remove the cloves and bouquet garni
- Blend the soup in a liquidiser, then push with a wooden spoon through a fine sieve
- Reheat and serve garnished with a few thyme leaves.
