Greek-style salad
A simple salad with the classic Greek flavours of feta cheese & olives

Ingredients
- 250g (9oz) bag fresh salad
- 6 spring onions, finely sliced
- 1 green pepper, finely sliced
- 8 radishes, quartered
- 100g (3½oz) feta cheese (vegetarian if required)
- 12 black olives
- 3 tbsp (45ml) olive oil
- 1 tbsp (15ml) tarragon vinegar
- Salt and freshly ground black pepper

Method
- Arrange the salad on a large plate and top with the onions, pepper and radishes
- Crumble over the feta cheese and add the olives
- Mix the dressing ingredients together and pour over the salad just before serving.
