
Mediterranean Loaded Pittas
Meal prep lunch with Warburtons Gluten Free Soft Brown Pittas. A delicious and light Mediterranean filling for your pittas made with a variety of vegetables

Ingredients
- 1 pack of Warburtons Gluten Free Soft Brown Pittas
- 2 red onion cut into small wedges
- 1 small aubergine, halved and cut into cubes
- ½ peeled butternut squash, cut into cubes
- 1 medium courgettes, halved and cut into 1cm slices
- 1 large pepper, seeds removed, cut into slices
- 4 tbsp olive oil
- Salt and freshly ground black pepper
- 1 garlic clove, crushed
To serve
- 50g feta, crumbled (optional)
- 10 cherry tomatoes
- Your favourite lettuce
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- ½ tsp caster sugar
Method
- Preheat the oven to 220C/200C Fan/Gas 7
- Veggie Prep: Place the red onion, aubergine, butternut squash, courgette, red pepper, and crushed garlic into a bowl. Drizzle with olive oil, sprinkle with salt and pepper, and toss until well coated. Spread them out in a single layer on a lined baking tray.
- Roast Away: Roast the vegetables in the oven for 30–40 minutes, or until they are golden and a little crisp. Turn them halfway through if needed. Allow them to cool on the tray and transfer them to a container for when you need them
- Dressing Up: Mix all the dressing ingredients together. Season well. The dressing can also be kept for when you need it (only pop dressing on the salad you’ll eat that day…no one wants soggy leaves!)
- Fill 'Em Up: When you’re ready to eat, stuff your Warburtons Gluten Free Soft Brown Pitta with the roasted vegetables and salad if you're serving one.
