Rainbow Fries

Ingredients

  • 200g sweet potatoes
  • 100g maris piper potato
  • 100g violetta potato
  • 200g parsnips
  • 400g heritage and golden beetroot
  • Olive oil
  • Salt and pepper. 

Method

  1. Peel and slice your veggies into long fries separating your potatoes from the parsnip and beetroot
  2. Toss your potatoes in oil and season with salt and pepper.
  3. Add the potatoes to the air fryer basket, making sure not to overcrowd.
  4. Select the “Fries” programme and cook for 10 minutes at 200°C.
  5. Shake your potatoes and repeat until they begin to colour and golden.
  6. While the potatoes are cooking, toss your parsnip and beetroot in olive oil, salt and pepper.
  7. Once the potatoes start to colour, add the parsnip and beetroot to the air fryer basket
  8. Continue to cook all of the veggies using the “Fries” setting at 200°C tossing every 10 minutes until your veggies are crispy (about 40 minutes).
