Rainbow Fries

Ingredients
- 200g sweet potatoes
- 100g maris piper potato
- 100g violetta potato
- 200g parsnips
- 400g heritage and golden beetroot
- Olive oil
- Salt and pepper.
Method
- Peel and slice your veggies into long fries separating your potatoes from the parsnip and beetroot
- Toss your potatoes in oil and season with salt and pepper.
- Add the potatoes to the air fryer basket, making sure not to overcrowd.
- Select the “Fries” programme and cook for 10 minutes at 200°C.
- Shake your potatoes and repeat until they begin to colour and golden.
- While the potatoes are cooking, toss your parsnip and beetroot in olive oil, salt and pepper.
- Once the potatoes start to colour, add the parsnip and beetroot to the air fryer basket
- Continue to cook all of the veggies using the “Fries” setting at 200°C tossing every 10 minutes until your veggies are crispy (about 40 minutes).
