Gluten Free Broccoli Gnocchi
Gluten free broccoli gnocchi are a tasty, simple pasta dish, perfect for a light, healthy lunch.

Ingredients
- 120g sunflower seeds
- 200g ground almonds
- 1 tsp salt
- 1/2 tsp bread spice (of choice)
- 2 1/2 tsp baking powder
- 10g psyllium husks (ground/powder)
- 30g walnuts
- 2 tbsp coconut oil
- 230g water
Method
- Cut the potatoes into small pieces and the broccoli into florets. Boil the vegetables in salted water for 15 minutes, until the potatoes are soft, then drain.
- Transfer the well-drained vegetables into a blender and blend them.
- Place the mixture into the breadmaker and gradually add the salt and flour, then knead with the Gluten-free Pasta programme (programme 17 SD-YR2550, programme 18 SD-YR2540, programme 13 SD-B2510, programme 16 SD-R2530).
- Take out the dough little by little and roll it on the floured surface to create long strands. Then flatten them a little, cut them into squares and add ridges with a fork or a wooden board for gnocchis.
- Place the gnocchi in a baking dish and cook them in your steam oven for 3 minutes (or steam them in another way). As a sauce we recommend a spinach extract/juice lightly thickened in a saucepan with a little starch or kudzu. Enjoy.
