Spiced Chickpea Stew
This easy spiced chickpea stew is one of our favourite go-to dinners and goes beautifully with gluten free pasta. If you're not in a hurry, you can simply put all the ingredients into a slow cooker and cook on a high setting for two hours.

Ingredients
- 1 tbsp oil
- 1 red pepper, 1cm diced
- 2 sweet potatoes, peeled and 1cm diced
- 400g chickpeas, tinned
- 1 tsp paprika
- 1 tsp cumin
- 1/2 batch of base tomato sauce
- Salt and pepper to taste
Method
- Heat the oil in a saucepan.
- Add the diced red pepper and sweet potatoes and cook for 3 - 4 minutes.
- Add the chickpeas and spices and cook for about a minute until fragrant.
- Add the base tomato sauce, cover and gently simmer for 20 - 25 minutes, stirring occasionally.
- Season to taste with salt and pepper and serve.
