Red Velvet Mug Cake
This cake for one can be made directly in a large mug, or make it in a bowl and then pour the mixture into your preferred mug.

Ingredients
- 4 tbsp gluten free plain flour
- 1 tbsp cocoa powder*
- ½ tsp baking powder*
- ¼ tsp Xanthan Gum
- 4 tbsp caster sugar
- 1 medium egg
- 3 tbsp milk
- 5 drop red food colouring
- 3 tbsp vegetable oil
- Squirty cream
- Sprinkles*

Method
- In a large mug or bowl, add the gluten free plain flour, cocoa powder, baking powder, xanthan gum, and sugar, and mix.
- Now add the egg, milk, food colouring, and oil, and mix until smooth.
- Centre your mug in the middle of the microwave oven and cook on high for two minutes, or until it has stopped rising and is firm to the touch. Leave to stand for five minutes.
- Top with cream and sprinkles.
