Apple Cake
This is a really lovely moist cake, great on its own or served with e.g. crème fraiche.

Ingredients
- 100g sultanas
- 150ml olive oil
- 200g caster sugar
- 2 eggs
- 350g plain gluten free flour *
- 1 tsp xanthan gum
- 1 tsp ground cinnamon
- 1½ tsp bicarbonate of soda
- ½ tsp cream of tartar
- ½ tsp salt
- 500g eating apples, skin on, grated.
- 1 lemon, zested

Method
- Soak sultanas in warm water for 20 minutes.
- Heat the oven to 180C/ 350F/ gas mark 4. Grease and line a 20cm cake tin
- Put the oil and caster sugar in a bowl, and beat to bring together. Then add the eggs one at a time and whisk so the mixture comes together. It should look a bit like mayonnaise.
- In a separate bowl, sift together the gluten free flour, xanthan gum, cinnamon, bicarbonate of soda, cream of tartar and salt. Fold the dry mix into the oil and sugar mix using a metal spoon. Add the lemon zest and grated apple. Drain the sultanas and add to the mixture
- Spoon the apple cake mix into the greased and lined cake tin. Bake for 1 hour, or until the cake is cooked through. Test with a knife or cake tester so the middle comes out dry.
