Gluten Free Tomato and Pepper Gnocchi Bake

Ingredients
- 2 tbsp oil
- 1 onion, finely diced
- 2 garlic cloves, crushed
- 1 yellow pepper, sliced
- 1 red peppers, sliced
- ½ tsp chilli flakes (optional)
- 1 tsp dried Italian herbs
- 400g tinned chopped tomatoes
- 50g mascarpone
- 100ml milk
- Salt and pepper to season
- 500g gnocchi* or use our homemade gnocchi recipe
- 50g pecorino or cheese of your choice

Method
- Heat the oil in a saucepan. Add the onions and cook for 5 minutes, without colour. Add the garlic and peppers and cook for a further 3-4 minutes.
- Add the chilli flakes, Italian herbs, tinned tomatoes, and bring to the boil. Add the milk and mascarpone, season to taste.
- To cook the gnocchi, place in boiling saltwater. Boil them for 1 minute, or until they float, then strain.
- Grease an ovenproof dish, add the gnocchi cover with sauce and top with cheese and grill for 5 minutes.
