Ingredients
For the slaw
- 2 carrots, peeled and grated
- ½ Chinese cabbage, shredded
- 1 bunch spring onions, washed and sliced
- 1 red peppers, deseeded and sliced
- 1 tbsp chopped mint
- 1 tbsp chopped coriander
For the dressing
- 1 lime, zested and juiced
- 1½ tbsp oil
- 1½ tbsp soy sauce
- 1 large red chillies, deseeded and coarsely chopped
- 1 clove garlic, finely chopped
- 1 tsp fresh ginger, finely grated
- Salt and pepper

- Mix all the ingredients for the slaw in a large bowl
- Combine all the dressing ingredients
- Dress the salad to serve
