
Gluten Free Herb Crackers
Using gram flour, which is another name for chickpea flour, is a great alternative to standard gluten free flour and gives these crackers a lovely texture.

Ingredients
- 125g gram flour*
- 25g ground flaxseed
- pinch baking powder*
- 1 tsp olive oil
- 1/2 tsp salt
- 1 tsp dried rosemary
- ½ tsp thyme
- 1 cloves garlic minced
- 50ml water

Method
- Combine all the ingredients in a large bowl and mix until a dough forms. Add a bit more water or chickpea flour as needed until you have a pliable dough.
- Sandwich the dough between two sheets of parchment paper and roll out – try to get them as thin as possible, about 3mm thick. Cut into round fluted discs. Then, using a fork, poke holes into each cracker.
- Bake at 170˚C, 350˚F, gas mark 4 for 15 minutes, until the edges are starting to brown and the crackers are firm.
