
Gluten Free Classic Roast Potatoes
These crispy potatoes are what makes a Christmas dinner special. The duck fat and gluten- free flour guarantee you a great crispy coating.

Ingredients
- 1kg Maris Piper or King Edward potatoes, peeled and cut to similar size pieces
- 4 tbsp duck fat
- 1 tbsp plain gluten free flour*
- 1 tsp English mustard powder*
- Salt

Method
- Heat the oven to 200°C, 400°F, gas mark 7.
- Cook the potatoes in a large pan of boiling water for 5 minutes. Drain well in a colander, then shake around to rough up the edges.
- Put the duck fat in a solid, shallow roasting tin and place the tin in the oven to heat up.
- Mix together the plain gluten-free flour and mustard powder, sprinkle over the potatoes and toss to coat. Tip the potatoes carefully into the hot fat and turn them over so each one is coated.
- Roast them in the oven for 50 minutes to 1 hour, turning them over halfway through so that they cook until crisp, golden and cooked through.
