- 1 ball of mozzarella or 125g shredded mozzarella

Method
- Preheat the oven to 200°C/400°F/gas mark 6.
- Using a food processor or blender, combine all the sauce ingredients into a smooth paste. Add 2 tsp of the oil from the sun dried tomatoes and the jalapeños. You can chop up the tomatoes and jalapeños into small chunks if you don’t have a processor.
- Put the chicken breasts in a large sandwich bag and bash with a rolling pin until flattened evenly, to the same thickness as a normal pizza (about 1.5 centimeters).
- Brush a little oil on each side of the chicken breast and season with a sprinkle of salt and pepper.
- Spread about a tablespoon of the tomato mixture over each chicken breast, then slice/sprinkle the mozzarella on top.
- Bake in the oven for 15 minutes, until the chicken is cooked and the mozzarella is golden and bubbling on top. Let it cool a little before eating.
- Serve with chips or salad, or enjoy by itself for a tasty lunch.
