Cheesy Tuna and Sweetcorn Potato Bake
If you love tuna and sweetcorn sandwiches then you will really enjoy this oven baked dish.

Ingredients
- 145g drained tin of tuna
- 190g drained tin of sweetcorn
- 250g cold mashed potato (you can use the inside of a jacket potato too)
- 2 tbsp mayonnaise
- 1 tbsp sriracha (optional – be careful, this is spicy!)
- 100g grated mozzarella
- 2 spring onions

Method
- Preheat the oven to 220°C/450°F /gas mark 8.
- Put all the ingredients except the mozzarella and spring onions into a large bowl and mix together well with a fork, being careful not to smoosh the sweetcorn up.
- Place the tuna mixture into the baking tray and using your fork, flatten it down, making sure it is the same depth all over.
- Sprinkle over the grated mozzarella and use scissors to finely cut the spring onion and scatter it evenly over the cheese.
- Place in the oven and cook for 15 minutes, until the top is bubbly and golden.
- Take the bake out of the oven and place on a safe surface.
- Leave for five minutes to cool, then serve with a side of your choice.
