Sweet jacket potato with salad

Ingredients

  • 2 whole sweet potatoes, 350g each
  • 2 handfuls spinach
  • 2 handfuls mixed salad
  • 75g cherry tomatoes, halved
  • 2 tbsp Olive oil
  • 100g tinned sweetcorn, drained
  • 10g Cheddar cheese, grated
  • 85g tinned butter beans, drained
  • 90g carrot, grated

Method

  1. Preheat oven to 200C/180C fan/gas 6
  2. Make a cross on top of the sweet potato and microwave on high for 8mins
  3. Drizzle half oil and a pinch of salt on top. Place sweet potato in the middle of the oven on a baking tray and bake for 15 minutes until crispy.
  4. Split potato and assemble the salad on top of the potato, drizzle with oil and season
