Apple and ginger cake

Ingredients
- 100g butter
- 200g golden syrup
- 300g gluten free self raising flour*
- 1/2 tsp gluten free baking powder*
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 2 medium eggs, beaten
- 2 dessert apples, chopped
- 100g preserved stem ginger, drained and finely chopped
- 1 tsp Demerara sugar

Method
Method when using the SD-ZX2522 bread machine with Gluten Free Cake program
- Place the blade into the bread pan
- Add all the ingredients into the bread pan in the order listed above apart from the Demerara sugar
- Set the bread machine to the GLUTEN FREE CAKE program for 1 hour 50 minutes
- After two minutes when the beep sounds, scrape any residue from the sides using a rubber spatula
- Sprinkle Demerara sugar on the top of the mixture
- After 1 hour test with a skewer and if it comes out clean the cake is cooked. If it is still sticky at the end of the program leave it in the bread pan with the lid closed and this will cook through during the stand period
- Remove the cake from the bread pan and allow to cool.
Method when using a Panasonic breadmaker without the gluten free cake program:
- Warm the butter and the syrup until just melted in the microwave on high for 1 minute
- Sieve the flour, baking powder and spices into a bowl and then add the syrup mixture and the beaten eggs
- Add the chopped apple and the chopped ginger and mix well
- Remove the kneading blade from the bread pan and line the bottom and sides with baking parchment or a 2lb loaf tine liner
- Carefully pout the mixture into the bread pan, being careful to ensure that the mixture is inside the baking parchment and sprinkle the Demerara sugar on the top of the mixture
- Select the BAKE option and enter 1 hour 5 minutes on the timer
- After baking test with a skewer and if it comes out clean the cake is cooked. If it is slightly sticky leave it in the bread pan with the lid closed and this will cook though during the stand period
- Remove the cake from the bread pan and allow to cool.
