
Salt beef with pickled cucumber

Ingredients
- 6 slices salt beef, cut in half
- 1 tbsp mustard*
- 2 medium picked cucumbers (about 75g)
- 12 slices of gluten free baguette (see separate recipe)
- 25ml (1fl oz) oil

Method
- To make the bruschetta slices drizzle the gluten free baguette slices with oil and toast in a moderate oven for 10 minutes.
- To assemble; spread a layer of the mustard on to the gluten free baguette, and top with a half slice of rolled salted beef. Cut the picked cucumber thinly and then place on top of the salt beef before serving.
