Sushi cone with mackerel

This naturally gluten free recipe is a great alternative to a sandwich.

Ingredients

  • 2 sheets of nori (cut in half length)
  • ½ batch of sushi rice recipe
  • Wasabi to taste
  • 2 mackerel fillet (80-100g each) cut in half
  • 100g beetroot, cut into match stick size pieces
  • salad leaves garnish

Method

  1. Place a sheet of nori on the bamboo mat, arranged with the long side towards you.
  2. Wet your hands to help you spread the rice onto the nori, leave about 1” without rice at the side. Spread on some wasabi in the middle of the rice to taste if you wish. Top with salad leaves, beetroot and mackerel.
  3. Roll it into a cone, repeat with the other pieces of nori and then enjoy!
