BFree Tofu Scramble Baguette – The Ultimate Vegan Breakfast Sub!

Ingredients

  • 2 BFree Bake at Home Triple Seeded Demi Baguettes
  • 200g tofu
  • 50g mushrooms
  • ½ red pepper
  • kale pesto
  • 1 tbsp olive oil
  • ½ tsp turmeric
  • ½ tsp cumin
  • 1 tbsp Dijon mustard
  • Salt 
  • Pepper

Method

  1. Preheat oven to 180 degrees
  2. Place 2 BFree Bake at Home Triple Seeded Demi Baguettes into oven and allow to bake for 10-12mins – until they turn crispy
  3. Drizzle 1 tbsp of olive oil into a pan 
  4. Add 200g of Tofu into the pan and allow to cook for 3-4mins
  5. Add ½ tbsp of turmeric and ½ tbsp of cumin into the pan
  6. Add 1 tbsp of Dijon mustard
  7. Scatter 50g of mushrooms into the pan 
  8. Add ½ of a sliced red pepper into the pan
  9. Allow to cook for 3-4mins
  10. Season the mix with salt and pepper
  11. Remove baguettes from oven
  12. Slice baguettes in half and spread kale pesto along each baguette
  13. Spoon tofu scramble from the pan onto each baguette
  14. Close baguette and enjoy!
