BFree Tofu Scramble Baguette – The Ultimate Vegan Breakfast Sub!

Ingredients
- 2 BFree Bake at Home Triple Seeded Demi Baguettes
- 200g tofu
- 50g mushrooms
- ½ red pepper
- kale pesto
- 1 tbsp olive oil
- ½ tsp turmeric
- ½ tsp cumin
- 1 tbsp Dijon mustard
- Salt
- Pepper
Method
- Preheat oven to 180 degrees
- Place 2 BFree Bake at Home Triple Seeded Demi Baguettes into oven and allow to bake for 10-12mins – until they turn crispy
- Drizzle 1 tbsp of olive oil into a pan
- Add 200g of Tofu into the pan and allow to cook for 3-4mins
- Add ½ tbsp of turmeric and ½ tbsp of cumin into the pan
- Add 1 tbsp of Dijon mustard
- Scatter 50g of mushrooms into the pan
- Add ½ of a sliced red pepper into the pan
- Allow to cook for 3-4mins
- Season the mix with salt and pepper
- Remove baguettes from oven
- Slice baguettes in half and spread kale pesto along each baguette
- Spoon tofu scramble from the pan onto each baguette
- Close baguette and enjoy!
