Polish Boiled Potatoes with Onion and Dill

- 6 large red potatoes, peeled and cut into medium chunks
- 250g /10oz onions, sliced
- 1 tbsp oil
- 1 tsp salt
- 2 tbsp fresh dill, chopped
Method
- Boil the potatoes in a large pot of salted water they are until tender. Drain them, return them to the pot, and set them over low heat for a few minutes to evaporate any remaining water. Remove from the heat.
- Meanwhile fry the onions in the oil slowly and over a low heat, to caramelise them.
- Toss the potatoes with the onions, salt and dill until all ingredients are well incorporated.
- Transfer the potatoes to a serving dish.
