Polish Boiled Potatoes with Onion and Dill

  • 6 large red potatoes, peeled and cut into medium chunks
  • 250g /10oz onions, sliced
  • 1 tbsp oil
  • 1 tsp salt
  • 2 tbsp fresh dill, chopped

Method

  1. Boil the potatoes in a large pot of salted water they are until tender. Drain them, return them to the pot, and set them over low heat for a few minutes to evaporate any remaining water. Remove from the heat.
  2. Meanwhile fry the onions in the oil slowly and over a low heat, to caramelise them.
  3. Toss the potatoes with the onions, salt and dill until all ingredients are well incorporated.
  4. Transfer the potatoes to a serving dish.
